MEAT, RICE, POTATO CASSEROLE 
1 lb. ground beef
1 c. raw rice
1 can cream of mushroom soup
1 can diced Rotel tomatoes
2 c. boiling water with 2 chicken bouillon cubes
Green onions
1 chopped onion
2 lg. potatoes

Brown beef after seasoning. Slice potatoes in thin round pieces and place in large casserole. Place chopped onions on potatoes. Season each layer. Put beef on potatoes. Sprinkle raw rice over beef. Mix 2 cups water and bouillon cube, once dissolved add Rotels, mushroom soup, and stir until blended and pour over raw rice. Cook covered until rice is done, about 1 hour.
