CHICKEN WITH ORANGES 
4 lbs. broiler fryer chicken cut in pieces
Salt and pepper
1/8 tsp. each cinnamon and ground cloves
3 tbsp. cooking oil
2 cloves garlic
1 med. size onion, chopped
1 c. orange juice
1 c. water
Pinch of saffron
2 tbsp. seedless raisins
1 tbsp. capers (or nasturtium seeds)
1/2 c. coarsely chopped almonds
3 Valencia oranges, peeled and sliced

Sprinkle chicken with salt, pepper, cinnamon and cloves. Brown over moderately high heat in the oil. Add the whole garlic and chopped onion and continue cooking until meat is well browned but not crusted. Add the orange juice, water, saffron, raisins and capers. Cover and cook slowly until chicken is tender, about 40 minutes. Add almonds 5 minutes before serving. Remove garlic. Decorate with orange slices. Serves 4 to 6.
