LIPTOVSKY SYR/LIPTAUER KASE
(PAPRIKA CHEESE)

8 tbsp. (1/4 lb. stick) (1/4 kg) butter, softened
1 lg. finely chopped onion
1 tsp. dry mustard
Ground black pepper to taste
2 tsp. caraway sees
1/4 tsp. salt
1 tbsp. sweet Hungarian paprika
1 tsp. finely chopped capers
Dash of ketchup
Dash of Worcestershire sauce
8 oz. cottage cheese
1/2 c. sour cream
Chopped chives

Put cottage cheese into a sieve and use a wooden spoon to push it through the mesh into a mixing bowl. Cream the butter by beating it against the side of another mixing bowl with a wooden spoon. Beat in the cottage cheese, paprika, the black pepper, salt, caraway seeds, mustard, capers, onion and sour cream. continue beating vigorously with wooden spoon (or electric mixer at medium speed) until a smooth paste forms.
