BLACK-EYED PEA PATTIES 
1 c. leftover black-eyed peas
1 egg
1/2 small onion, chopped fine
1/4 tsp. cayenne pepper or black pepper
1 tsp. canola oil

Mash peas. Combine with egg, onion, pepper and salt. Drop by tablespoonfuls into canola oil. Fry until golden brown. Drain on paper towels, then serve while hot.
