BLACK-EYED PEA SAUSAGE STEW | |
1 (16 oz.) pkg. smoked sausage links 1 small onion, chopped 2 (15 oz.) cans black-eyed peas, rinsed and drained 1 (14 oz.) can stewed tomatoes 1 (8 oz.) can tomato sauce 1 c. beef broth 1/4 tsp. garlic powder 1/4 tsp. cajun seasoning 1/4 tsp. pepper 1/8 tsp. salt 1/8 tsp. cayenne pepper 1/8 tsp. hot pepper sauce 1 1/2 c. frozen corn In large skillet, slice sausage into bite size pieces. Cook sausage and onion over medium heat until meat is slightly browned. Drain. Add peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10 to 12 minutes or until hot and bubbly. Stir in the corn and cook 5 minutes longer or until heated through. Serves 6. |
