CHICKEN JAMBALAYA | |
1 lg. fryer 4 tbsp. oil 2 tbsp. salt 1/2 tsp. red pepper 1 lg. onion, chopped 1/2 c. chopped celery 1/2 c. chopped bell pepper 1/2 c. green onion and tops, minced 4 c. water 2 c. raw rice 1 clove garlic, minced Season cut chicken with salt and pepper. Use heavy pot, brown chicken in oil, using medium flame. Set brown chicken aside in another pan. Fry onions, celery, bell pepper and green onions in same heavy pot until wilted, not brown. Add water, rice, chicken and garlic. Mix well. Cover and cook on low heat until rice is done, about 30 minutes. |
