CHICKEN JAMBALAYA 
2 1/2 to 3 lbs. chicken (or breasts)
1 doz. sausage links
2 c. water
1 tsp. salt
1/4 tsp. pepper
1 c. rice
1/4 tsp. thyme leaves
Ground red pepper to taste
1 lg. onion, chopped
1 or 2 green peppers, chopped
2 to 4 cloves garlic, chopped
Snipped parsley

Put chicken, salt and pepper into water and bring to a boil. Simmer 1/2 hour. Remove chicken from bones. Strain broth through a towel to remove grease. Fry sausages and drain. Cut into pieces. Put chicken, sausage and rice into boiling broth. Add all seasonings, and vegetables. Simmer between 30 to 45 minutes until rice is cooked. When finished it should be fluffy, like a pilaf. You may need to add more boiling water as it cooks for moisture.
