OLD FASHIONED CHICKEN JAMBALAYA | |
1 hen, cut in pieces 2 c. raw rice 2 c. water 1/2 c. vegetable oil 1 tsp. salt 1 tsp. pepper 1 bell pepper, diced 1 c. onion, diced 1 c. green onions, chopped Season chicken and cook with oil in a heavy pot. Brown well, adding as little water as necessary and cook until tender. Remove some of the oil and add water, rice, bell pepper and onions. Adjust seasonings. Cook covered on very low heat, stirring often. Add green onion after 10 minutes of cooking time. Continue cooking an additional 10 to 15 minutes, or until rice is done. Note: Pork ribs or sausage may be substituted. |
