CHICKEN JAMBALAYA 
1 c. chopped onion
1 c. chopped green pepper
2 cloves garlic, chopped
2 tbsp. salad oil
1 c. diced cooked ham
12 sm. pork sausage links, sliced
1 c. diced cooked chicken
2 (16 oz.) cans tomatoes
1 c. raw rice
1 1/2 c. chicken broth
1/2 tsp. thyme
1 tsp. salt
1 tbsp. chopped parsley

Saute onion, green pepper and garlic in hot oil in skillet, stirring frequently until tender. Stir in meats and cook for 5 minutes. Add all remaining ingredients and place in greased casserole dish. Cover dish and bake at 350 degrees for 1 hour. Serves 8. From Southern Sideboards Cookbook.
