MACKEREL SALAD | |
1 king fish fillet or mackerel fillet 1 c. chopped celery 1 c. mayonnaise 1 c. onion, chopped 3 tbsp. lemon juice 1/4 c. chopped parsley 1 tsp. salt 1 tsp. pepper 1 tbsp. dill weed Cook fish in a covered steamer over boiling water for about 15 minutes. If steaming is impractical poaching will suffice. Remove all fish skin and bones. Place in refrigerator overnight. Flake chilled mackerel with a fork. Mix all ingredients in bowl. Refrigerate for a couple more hours before serving. Good served with crackers. |
