ZUCCHINI WALNUT BREAD 
1 1/2 tsp. baking soda
3/4 tsp. baking powder
2 tsp. cinnamon
2 c. unpeeled grated zucchini
2 c. sugar
1 c. vegetable oil
4 eggs
3 1/2 c. flour
1 c. chopped nuts

Mix sugar, oil and eggs until golden yellow. Mix flour, soda, baking powder and cinnamon together and add to above mixture. Add zucchini and walnuts last. Bake at 340 degrees for 60 minutes. Makes 2 loaves.

Optional glaze for bread: 1/2 cup powdered sugar with a little milk and vanilla. Drizzle over top.
