ZUCCHINI WALNUT BREAD 
1 c. nuts
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. unsifted flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated zucchini
1 c. raisins
1 tsp. vanilla

Chop nuts. Set aside. Beat eggs and gradually beat in sugar, then vegetable oil. Combine dry ingredients. Add to first mixture alternately with zucchini. Stir in raisins and chopped nuts. Add vanilla. Divide batter into 2 greased and floured loaf pans.

Bake 55 minutes in 350°F oven. Cool 10 minutes. Remove from pans and cool on wire racks. Freezes well.
