CHICKEN WITH APPLE CITRUS
STUFFING
 
1/2 c. celery, chopped
1/4 c. onion, chopped
3 tbsp. butter
1 tsp poultry seasoning
4 c. slightly dried bread cubes (5 to 6 bread slices, cubed & dried overnight)
1 c. red apple, chopped
3 tbsp. fresh parsley, chopped
3/4 tsp. orange peel, shredded
Juice from orange plus water to make 3/4 cup
1 baking chicken, thawed if frozen 5 to 6 lbs.

Cook and stir celery and onion in butter in medium saucepan over medium heat until crisp-tender. Stir in poultry seasoning. Combine bread cubes, apple, parsley and orange peel in large bowl. Add celery mixture and orange juice mixture; toss to mix. Preheat oven to 325 degrees. Prepare chicken for roasting. Stuff neck and body cavities lightly. Roast immediately according to package directions. Yield: 5 to 6 servings chicken; 4 cup stuffing.
