MEXICAN FRIED CORN 
1 tbsp. plus 1 1/2 tsp. unsalted butter
1 c. unsalted corn
1/4 green pepper, thinly sliced
1/2 tsp. finely chopped onion
1 tbsp. sliced pimento
Freshly ground pepper
1/2 tsp. snipped parsley

Melt butter in skillet, stir in corn green pepper and onion. Cover tightly and simmer over low heat, stirring frequently, until green pepper is tender, 20 minutes. Add pimento and pepper and simmer 2 to 3 minutes. Garnish with parsley.

2 servings (1/3 cup serving). 1 serving = 1 unsalted bread group 1.
