LEMON CAKE SUPREME | |
1 Duncan Hines Lemon cake mix 4 eggs 1 c. water 1/2 c. softened butter (4 oz.) 1 (3-4 oz.) pkg. Jello Lemon Instant Pudding Mix 1/4 c. sweetened condensed milk 1 tsp. grated lemon peel 2 tbsp. lemon juice Preheat oven to 350 degrees. Grease and lightly flour a 9 x 13 pan. Place the cake mix, eggs, water, butter, pudding mix, condensed milk, lemon peel, and lemon juice into a large bowl. Blend until all ingredients are moistened, then mix at medium speed for 2 minutes. Pour batter into the pan, and bake for 45-50 minutes. Cool in the pan on a rack for 15 minutes. Remove from the pan and frost with Lemon Cream Cheese Frosting. LEMON CREAM CHEESE FROSTING: 1 (8 oz.) Philadelphia cream cheese 1/2 c. softened butter (4 oz.) 1 box powdered sugar, sifted 1 tsp. vanilla 2 tsp. grated lemon peel In a large bowl, cream the butter and cream cheese together. Gradually add the powdered sugar, beating thoroughly after each addition. Add the vanilla and grated lemon peel. Beat until the frosting is as fluffy as desired. |
