SWEET POTATO CASSEROLE 
4 (15 oz.) cans yams
1 tsp. vanilla
2 well beaten eggs
2/3 c. granulated sugar
1 stick butter

TOPPING:

2/3 c. brown sugar
1/2 c. all purpose flour
1 c. (cut up) pecans
1/3 c. butter

Cook yams until hot and drain. Mash with next 4 ingredients in mixer. Place in greased casserole. Topping can be layered or mixed, but better mixed and cover potato mixture.

Bake at 350 degrees for 30 minutes. Topping can be made richer by increasing brown sugar and flour to 1 cup each.
