AMERICAN KEY LIME PIE | |
1 envelope Knox gelatin 1/2 c. sugar 1/4 tsp. salt 4 egg yolks 4 egg whites 1/2 c. sugar 1 c. cream, whipped 1 baked pie shell 1/2 c. lime juice 1/4 c. water 1 tsp. grated lemon peel Few drops of green food coloring Thoroughly mix gelatin, 1/2 cup sugar and salt in a saucepan. Beat together egg yolks, lime juice and water, stir into gelatin mixture. Cook over medium heat, stirring constantly just until mixture comes to boiling. Remove from heat, stir in grated lime peel, add food coloring sparingly to give a pale green color. Chill, stirring occasionally until mixture mounds slightly when dropped from a spoon. Beat egg whites until soft peaks form, gradually add the 1/2 cup sugar, beating to stiff peaks. Fold gelatin mixture into the beaten egg whites and then fold in the whipped cream. Pile into baked pie shell. Chill until firm. |
