EASY SALSA TACO BOATS 
2 lb. ground pork
1 pkg. Old El Paso soft tortilla taco boats
1 (16 oz.) jar mild black bean & corn salsa (any brand)
diced yellow onion
shredded lettuce
shredded cheese (any variety)

Brown ground pork in a skillet. Drain excess fat. Pour entire jar of salsa into skillet with pork. Mix and simmer until suitably warm.

Place individual taco boats on plates and begin layering ingredients. Place some shredded cheese in the bottom of each boat - Top with meat/salsa mixture - Add onions and lettuce - Add more meat mixture - Finish with more shredded cheese. Heat in microwave for 30 seconds and serve.

Please Note: More or less ingredients may be needed, depending on the number of people you are serving.
