BIG O'S FAMOUS BEEFY BEEF STEW | |
This recipe is super easy and your family and friends will love it! Feel free to add different veggies or even beans, but this is the way I make it and it's always requested from my family and friends. Hope you like it. 1 lb. beef stew meat, cut into 1/2 to 3/4-inch pieces 1 lb. 85/15 ground beef 1 regular size can veg-all 1 small can sweet corn 1 can French style green beans 1 small can sliced carrots 4 small to medium "gold" potatoes 1 can diced green chilis 1 bottle V-8 juice 2 tbsp. minced garlic salt and pepper, to taste (I use a lot of pepper) Peel and cut potatoes into 3/4-inch pieces (do not brown meat beforehand, it adds to flavor when they cook together). Add all ingredients to pot, cook on medium/high heat bring to boil and reduce heat slightly. Let simmer for 45 minutes to 1 hour. Serve with cornbread or crackers. Submitted by: Otis Himes |
