ANNA'S SOLE ZUCCHINI | |
4-6 sole fillets (flounder may be substituted) 4-6 sm. zucchini squash, sliced thin 2 tbsp. butter 1/2 tsp. sea salt 1/4 tsp. cayenne pepper 2 toes garlic, chopped fine 2 tsp. green pepper, chopped fine 1/2 tsp. olive oil 1 tbsp. onion, chopped fine 1/4 c. lemon juice Boil zucchini until tender. Saute fish in butter, about 4 minutes each side. In a baking dish, layer zucchini, fillets and then pour the remaining ingredients. Bake at 350 to 400 degrees for 18-20 minutes. Serve with French bread. Serves 4 people or 2 Italians. |
