LENTIL SOUP | |
1 pkg. lentils Celery 1 lg. onion Salt Baking soda 1 lb. hot dogs 4 sm. potatoes, peeled an cubed Smoked ham hock In a large kettle, put package of lentils and cover with two quarts of water. Bring to boil. Add pinch (about 1/4 teaspoon) of baking soda. THIS WILL FOAM up and spill over it not careful. Reduce heat, cook 10 minutes. Remove from heat, drain lentils, rinse with water. Fill kettle (after rinsing) with fresh water (2 quarts). Add lentils, 3 stalks of celery with leaves cut into small pieces, chopped onion and ham hock. Cook for 50 minutes. Add salt, to taste, potatoes, and hot dogs which have been cut in 1/2 inch slices. Cook another 15 to 20 minutes. After cooking, remove meat from ham hock, add to soup and discard skin and bone from hock. Best if not eaten until next day. |
