LENTIL SOUP (SHAWRABAT ADDAS) 
2 c. red split lentils (addas majroush)
4 lg. onions, chopped
Salt, allspice and cumin according to taste
1/2 c. olive oil
2 qt. water
1/2 c. lemon juice

Cook and stir the onions in oil in a saucepan over medium heat until onions are tender. Add lentils, water and spices. Bring to a boil. Cover and simmer until tender. Just before serving, add lemon juice. On the side have bite-size pieces of toasted Arabic bread.

Very few arab families cook with red lentils - they cook too fast and don't hold up to the long cooking Adas need to be so tasty. Use yellow or green, skip the all spice, add some garlic, salt, pepper, parsley, and veg stock to this recipe and it might be something you want to eat.
