OLD FASHIONED SCALLOPED POTATOES 
6 lg. or 9 med. potatoes, washed well and peeled
3 lg. yellow onions
1 to 1 1/2 c. flour
1 c. butter
1 qt. milk (approximately)
Salt and pepper
4 stalks celery
1/4 to 1/2 lb. ham or 6-8 frankfurters (optional)

Prepare potatoes; peel and slice onions. Use a well-greased 4-quart casserole dish or 9x13x2 inch pan. First layer the sliced potatoes, then layer onion. Sprinkle flour, salt and pepper. Dot layer with butter. Should you prefer the meat, slice and layer as with potato and onion and celery. Repeat process until all vegetables and meat are used.

Pour gently the milk over the layers until just covered. Make sure clumps of flour are dissolved. Cover with foil and bake at 450 degrees for first 1/2 hour. Then turn down to 350 degrees for last 1/2 to 45 minutes of cooking time. Bake last 15 minutes with foil off to brown. This takes time but is economical and very filling.
