OLD FASHIONED POTATO SOUP | |
1 smoked ham hock 1 carrot, chopped 1 to 2 pieces celery, chopped 1 onion, chopped 2 tsp. parsley, minced 6 to 8 potatoes, diced 1 qt. milk 3 hard boiled eggs, chopped 1 to 2 tbsp. butter Salt and pepper In a large pot, cover ham hock with water and bring to a boil. Add carrot, celery, onion and parsley. Reduce heat and cook until ham is tender (about 1 hour). Remove ham from broth and cut meat from bone. Return ham to broth along with potatoes and cook until potatoes are tender (about 15 minutes). Turn off heat and add milk, hard boiled eggs, butter and salt and pepper to taste. |
