NEVER-FAIL CORN BREAD | |
1 c. plain corn meal 1/2 c. plain flour 2 3/4 tsp. baking powder 2 tbsp. shortening (Mazola liquid) 1 egg 3/4 tsp. salt 1 c. milk Combine dry ingredients in a medium mixing bowl. Add milk, then the egg. On the stove top, put oil in skillet and heat. Pour heated oil into batter mixture, then sprinkle the skillet with a dusting of corn meal (lightly brown corn meal, but take care not to burn). Remove skillet from stove top and pour in batter mixture. Bake in a 450 degree oven until brown, about 20-25 minutes. NOTE: This recipe may be used for corn muffins, corn sticks or hushpuppies. If preparing hushpuppies, omit egg and add finely chopped onion. The hushpuppies should be deep fried. |
