PLAYHOUSE CUTLETS | |
6 (4 oz.) veal cutlets, pounded 6 (1 oz.) slices ham 6 (1 oz.) slices Swiss cheese 3 c. bread crumbs, seasoned 6 eggs, beaten 2 c. flour Place veal cutlets down, putting a piece of ham and cheese on top of each cutlet. Roll the cutlet up. Have 3 bowls: 1 for flour, 1 for beaten eggs and 1 for bread crumbs. Dip rolled up cutlets into flour first, then pat off excess flour. Dip in eggs, then place in bread crumbs. Repeat process (not in flour). Pan fry veal in oil for about 1 1/2 minutes on each side. The bake for 30 minutes at 300 degrees. Serves 6. |
