BAKED CHICKEN SALAD 
3 c. cooked chicken, diced
1/2 c. celery, chopped
1 c. cheddar cheese, reserve 1/2 c. for topping
1 tbsp. onion, chopped
1 tbsp. lemon juice
Salt and pepper to taste
4 tbsp. mayonnaise
6 slices of tomato
2 c. crushed potato chips

Mix together chicken, celery, cheese, onion, lemon juice, and mayonnaise. Pour in a baking dish, top with tomato slices.

Bake 25 minutes in 350 degree oven. Sprinkle remaining cheese and chips on top, return to oven and cook until cheese melts. Serve hot.
