CREAMY CARROT--NUT MOLD 
1 (6 oz.) pkg. orange flavored gelatin
2 c. very hot water
1 c. sour cream
1 (13 1/2 oz.) can (1 2/3 c.) crushed pineapple, undrained
2 c. grated carrots
1/2 c. chopped walnuts

Lightly oil a 2 quart mold with salad or cooking oil, (not olive oil). Set aside to drain. Pour hot water over gelatin in a bowl and stir until gelatin is completely dissolved. Gradually add gelatin mixture to sour cream, stirring until well blended. Chill until mixture begins to gel (becomes slightly thicker). If mixture is chilled in refrigerator, stir frequently. Stir in pineapple, grated carrots, and chopped nuts. Turn into the mold. Chill until firm (about 4 hours). Unmold on bed of greens.
