CARROT PINEAPPLE LIME MOLD 
1 sm. pkg. lime Jello
1/2 c. shredded carrot
1/2 c. canned crushed pineapple, no sugar

Prepare Jello as package directs but do not chill. Rinse four 1 cup molds with cold water; press 1/4 of the carrot in bottom and up sides of each mold; spoon 1/4 of the pineapple into the center of each mold; carefully spoon 1/2 cup prepared Jello over each portion. Cover and chill until firm. Unmold and serve. Makes 4 servings.
