POTATOES & DUMPLINGS 
1 1/2 c. flour
1 egg
Water
6 potatoes
Salt

Peel and cut potatoes in 1 inch squares. Put in large saucepan and cover by 1 inch of salted water. Bring to boil and simmer. Mix flour, eggs and enough water to make a stiff dough. Drop by teaspoon in boiling water. Cook 15 minutes. Take out dumplings by slotted spoon and put in a strainer.

When potatoes are soft, remove by slotted spoon and put in a flat dish to mash. (Do not add milk or butter.) Heat oil in fry pan and add dumpling and cover with mashed potatoes. Cover pan with lid and brown. To serve, place water potatoes were cooked in soup bowl and add dumplings and potatoes.
