ROASTED AND STUFFED BONELESS
CORNISH HEN
 
1 (16 oz.) Cornish hen
2 cauliflower florets
2 broccoli florets
1 oz. slice red onion
1 oz. slice Mozzarella cheese
1 oz. slice cooked ham
2 tsp. garlic salt
1 oz. shoestring carrot

Cut Cornish hen through the breast to remove all bones except the end of wings and drumstick. Season with garlic salt; add slice ham, cheese, broccoli, carrot and cauliflower (vegetables should be blanched). Roll Cornish hen and tie with butcher twine.
