STEWED TOMATOES 
2 tbsp. butter
1 onion, finely chopped
1/2 c. green pepper, diced
1 tbsp. flour
2 tomatoes, diced
1 tsp. salt
1 tsp. sugar
1 1/2 slices toasted white bread, buttered

In medium saucepan, melt butter. Add onion and green pepper; saute for 3 minutes. Add flour. Cook and stir for 1 minute. Stir in tomatoes, salt and sugar. Cook and stir until mixture boils and thickens. Cut toasted buttered bread into 1/2 inch squares. Stir in half of the toasted square. Pour into greased 1 1/2 quart casserole. Top with remaining toast squares. Bake in a preheated 350 degree oven until hot and bubbly, about 15 minutes. Serves 4.
