ZUCCHINI BREAD 
3 eggs, beaten lightly
1 c. oil
2 c. sugar
3 c. flour
3 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
3 tsp. vanilla
1 c. walnuts
3 c. zucchini, grated coarsely

Bake in 2 square loaf pans or one 13 x 9 inch cake pan. Temperature at 325 degrees. Bake until bread comes loose from pan, 30 to 35 minutes.
