MY SQUASH CASSEROLE 
2 cans squash
1 can cream of chicken soup, undiluted
1 lg. container sour cream
1 stick of butter
3 lg. carrots, ground coarsely
1 med. onion, chopped fine
1 sm. can pimento, cut in strips
1 pkg. (blue) Pepperidge Farms stuffing

Cook, drain, mash, and season squash with salt and pepper. Melt butter. Stir in stuffing mix (save some for topping). Mix all other ingredients and top with remaining stuffing mix. Cook 30 minutes in 350 degree oven.
