MUSHROOMS WITH GARLIC, OIL AND
PARSLEY
 
1 garlic clove
3 tbsp. butter
3 tbsp. vegetable oil
1 lb. mushrooms
Salt
Pepper
1 tbsp. chopped parsley
1 tsp. lemon juice

Crush the garlic and saute lightly in a frying pan with the butter and a little oil.

Wash the mushrooms and chop into pieces. Add to the frying pan; flavor with salt, ground pepper and cook for 10 minutes over a brisk heat, stirring gently with a wooden spoon. Add lemon juice.

Just before turning off the heat, sprinkle with the chopped parsley and serve on a heated serving dish.

Cook's tip: this is an ideal accompaniment to grilled meats.
