APRICOT MERINGUE PIE 
4 tbsp. sugar
5 tbsp. flour
1/2 c. milk
1/4 tsp. salt
1 1/2 c. milk
3 egg yolks
1/2 c. boiled dried apricots, mashed

MERINGUE:

3 egg whites
2 tbsp. sugar

Mix first three ingredients. Add to next three in saucepan. Cook over medium heat, stirring constantly. Pour into baked pie crust. Spread apricots over pudding. Put meringue on top and bake at 400 degrees for 8-10 minutes.
