APRICOT CREAM PIE 
1 c. sugar
2 tbsp. flour
1/4 tsp. salt
2 tbsp. butter
2 c. milk
3 egg yolks, beaten
1 tsp. vanilla
1 baked 9 inch pastry
1 pkg. apricots, dried

MERINGUE:

3 egg whites, beaten stiff
6 tbsp. sugar

Slightly cover 1 package dried apricots with water. Add 1 cup sugar. Cook over medium heat until tender. Set aside.

Using double boiler, mix sugar, flour, and salt. Add 2 cups milk and 2 tablespoons butter. Cook over medium heat, stirring constantly 10 minutes. Stir a small amount of hot mix to beaten egg yolks. Add this to mixture and cook until thickened. Remove from heat.

Beat egg whites until stiff peak. Add sugar gradually beating constantly. Pour pie mixture in baked pastry.

Mash apricots and cover top of filling. Pile egg whites on top. Bake 350 degrees for 15 minutes or to brown.
