CARROT CAKE AND FROSTING 
4 eggs
2 c. flour
2 c. sugar
2 c. grated carrots
1 c. chopped pecans
1 1/3 c. Wesson oil
1 tbsp. cinnamon
1 tsp. baking soda

Mix well flour, sugar, cinnamon and soda. Add oil and eggs one at a time. Add carrots and pecans gradually mixing well after each addition. Bake in 2 pans, greased and lined with wax paper at 350 degrees for 50 minutes.

FROSTING:

1/2 c. butter
1 tsp. vanilla
1 (11 oz.) pkg. cream cheese
2 1/2 c. powdered sugar

Mix all frosting ingredients together. Frost cake after it has cooled.
