CARROT CAKE AND CREAM CHEESE
FROSTING
 
2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. oil
4 eggs
1 tsp. vanilla
3 c. grated carrots (about 6 or 7)
1/2 c. chopped nuts

Sift all dry ingredients together in bowl. In another bowl, mix oil, eggs, vanilla. Add to dry ingredients. Beat about 2 minutes. Add carrots, stir. Bake at 350 degrees for 40-50 minutes.

FROSTING:

2 (3 oz.) pkg. cream cheese
3/4 cube butter
1 tsp. vanilla
1 1/2 c. powdered sugar

Cream first 3 ingredients. Add sugar, beat until creamy.
