GRITS IN DRESSING | |
1 recipe baked egg bread (recipe follows) 1/2 c. grits (cooked in 2 c. water) 1 1/2 qts. chicken or turkey broth 1/2 c. diced onions 1/2 c. diced celery 6 to 8 slices toasted bread 4 eggs, beaten Salt, seasoned salt, sage, and pepper to taste 1/3 c. melted butter Cook grits in 2 cups water in which salt and butter has been added. In large bowl crumble baked egg bread and toast. Add remaining ingredients. Stir to blend. Bake in a cast iron skillet or baking dish for 40 to 45 minutes at 350 degrees. Delicious. Serves 8. BAKED EGG BREAD 8 tbsp. plain cornmeal 10 tbsp. self rising flour 1 tbsp. sugar 1/2 tsp. salt 3 tsp. baking powder 1 egg 3/4 c. milk 4 tbsp. oil or bacon grease Preheat oven to 400 degrees Grease a cast iron skillet with 1 tbsp. shortening. Place skillet in oven to get hot. In medium size mixing bowl, measure flour and cornmeal by cutting excess off tbsp. with knife. Add remaining ingredients. Quickly stir. Remove skillet from oven and pour batter in. Quickly return to oven for 15 to 20 minutes or golden brown. This is so good you cannot resist tasting while hot. |
