CHICKEN FAJITAS | |
3 whole chicken breasts, boned, halved & skinned MARINADE: 1/2 c. olive oil 1/4 c. red wine vinegar 1/3 c. lemon or lime juice 2 cloves garlic, finely chopped 1 tsp. sugar 1 tsp. oregano 1/2 tsp. ground cumin 1/2 tsp. salt 1/2 tsp. liquid smoke Combine marinade ingredients and marinate chicken breasts 8 hours or overnight. Remove chicken from marinade and grill 4 minutes on each side. Cut chicken into small pieces. Serve with flour tortillas and your favorite accompaniments: salsa, guacamole, sour cream, etc. |
