JAMBALAYA 
1 chicken
1 lb. sausage
1 lg. onion
1 c. celery, finely chopped
2 bay leaves
1 c. shallots, chopped
4 cloves garlic, chopped
1/2 tsp. basil
1/2 tsp. thyme
1 lb. shrimp, peeled
1 lg. can tomatoes, drained

Boil chicken and debone. Save stock. Cut sausage into small pieces. Fry and remove from pan. Saute seasonings in drippings. Add shrimp, chopped tomatoes and chicken pieces, simmer. Prepare rice using chicken stock and juice from tomatoes (4 cups liquid to 2 cups raw rice). Combine all ingredients and bake 30 minutes at 350 degrees.
