SPANISH RICE 
1 c. uncooked rice
1/4 c. butter
1 med. onion, thinly sliced
1/2 med. green pepper, diced
2 c. stewed tomatoes with juice
1 tsp. salt
Dash of pepper
1 c. water

Heat butter in saucepan, add onion, green pepper and rice. Cook and stir over high heat until lightly browned. Add rest of ingredients. Mix well. Bring gently to boil, cover tightly, lower heat. Simmer gently 30 minutes.
