SPANISH RICE & BEEF | |
1 lb. ground beef 1/2 c. chopped onion 1 c. rice, uncooked 2/3 c. chopped green pepper 1 can (16 oz.) stewed tomatoes 1 can (16 oz.) whole tomatoes & juice, cut up 2 c. water 5 slices crisp bacon, crumbled 1 tsp. chili powder 1/2 tsp. oregano 1 1/2 tsp. salt 1/8 tsp. pepper Fry 5 slices of bacon until crispy; crumble. Brown ground beef and onion. Drain fat; add all other ingredients. Pour into casserole. Cover and bake in 375 degree oven, stirring occasionally, until rice is tender; 45 to 60 minutes. |
