OLD - FASHIONED OATMEAL COOKIES | |
2 c. rolled oats 1 1/2 c. flour 1 tsp. baking powder 1 1/2 tsp. cinnamon 1/2 tsp. salt 1 c. unsalted butter, softened 1 c. packed brown sugar 1 tbsp. vanilla 2 eggs 1 c. chopped pecans 1 c. raisins In a bowl, combine oats, flour, baking powder, cinnamon and salt. Stir slightly with a fork to combine. In medium bowl, cream butter and sugar. Add vanilla and eggs. Add dry ingredients, pecans and raisins and mix well. Drop batter by rounded tablespoons two inches apart onto buttered baking sheets and bake 10 to 12 minutes at 350 degrees. Ten minutes will give you a chewy cookie, 12 minutes a crisp one. Makes 50 to 60 cookies. |
