CELERY CASSEROLE 
4 c. celery, cut diagonally in 1/2-inch pieces
1/2 c. water
1 tbsp. sugar
1/2 c. to 1 c. pecans, chopped
3 tbsp. flour
1/2 c. butter
1 tsp. pepper
1 tsp. salt
1 egg, slightly beaten
1 c. heavy cream
Crushed crackers

Place celery, water, and sugar in a pan. Cover and heat to boiling. Lower heat and cook for 10 minutes. Add pecans. Melt butter and blend in flour and seasonings.

Combine egg and cream; stir into butter mixture. Cool, stirring constantly until thick. Mix with celery and crushed crackers. Bake for 20 minutes at 350 degrees.
