GRANDMA SMITH'S NOODLES 
3 egg yolks
1 whole egg
3 tbsp. cold water
1 tsp. salt
2 c. sifted flour

Beat eggs until light and fluffy. Beat in water and salt. Stir in flour. When too stiff, work in hands. Divide in 3 parts. Roll thin and cut into 1/8 inch strips. Makes 6 cups.

NOTE: Cook in good, rich broth, not water.

NOTE: May not use all of flour.
