GRANDMA'S OLD TIME LEMON PIE 
1 c. sugar
5 tbsp. cornstarch
1/4 tsp. salt
2 c. milk
3 egg yolks, beaten
3 tbsp. butter
1 tsp. lemon rind
1/3 c. lemon juice
1 (8" or 9") pastry shell, baked

Mix sugar, cornstarch and salt. Add milk gradually and stir until smooth. Cook over low heat, stirring until thick. Stir a small amount into beaten yolks, blend and combine with the hot mixture. Continue cooking, stirring about 5 minutes. Remove from heat, add butter, lemon rind and juice. Blend and pour into 3 egg whites, add 3 tablespoons sugar and beat until sugar is dissolved. Bake at 350 degrees until light brown.
