MOLASSES OLD FASHIONED STACK
CAKE
 
1 c. molasses
1 c. brown sugar
1 c. buttermilk
1 tsp. baking soda
All-purpose flour (start with 4 c. sifted)
1/2 c. shortening
1 tsp. ginger
1 tsp. cinnamon
1 egg

Make a well in the center of a bowl of sifted flour (there is no definite amount of flour) and mix the ingredients as you would biscuit dough. Knead until stiff. Pinch off enough dough for one layer at a time; roll thin. Lay an old-fashioned pie pan on the dough and cut around the edges for each layer. Bake in a round skillet the size of the pie pan until medium brown. Do not bake longer or layer will be too hard.

Spread apple butter or fruit filling between layers. (A 12-inch round iron skillet works best--greased each time before placing layer in to bake.) Bake at 375 degrees about 10 minutes for each layer. (These are my great-grandmother's directions. There was no temperature control on her stove and the only kind of skillet she had was cast iron.)
