APPLE FLAN
1 1/2 c. flour
1/2 c. butter
1/4 c. powdered sugar

FILLING:

2 lg. apples
1/4 c. raisins or currants
2 tbsp. sugar

TOPPING:

8 oz. cream cheese
1/2 c. sugar
2 tbsp. lemon juice
2 eggs

PASTRY: Blend pastry ingredients and spread in flan pan pressing into fluted sides.

FILLING: Peel and slice apples. Lay apple slices on pastry, overlapping. Sprinkle over apples, raisins or currants and sugar.

TOPPING: Beat together ingredients and pour over apples. Bake at 375 degrees for 40 minutes. Cool, refrigerate until serving time. Before serving, sprinkle with powdered sugar.

SUGGESTIONS: Substitute pears for apples. Omit raisins and use scant 2 tablespoons sugar (depending on sweetness of pears). I have also sprinkled pears with 1 1/2 tablespoons of Grand Marnier. The pastry in this recipe can also be used as crust for some pies such as cranberry or chocolate. Serves 8 to 12 people.
